Session 1 “Buy a café, Start your own, or buy into a franchise?”
What will suit you the best, starting your own café, or buying an existing one or buying into a franchise?
How do you assess the value of a café? What are the pitfalls? How do you read the vendor’s trading statement? Lease documents? How do you understand the jargons used in the "Business for Sale" section such as 3x3x3? 5+5 lease? 15 kilos coffee? trial? wi/wo? How do the takings of a cafe relating to the price? How much should you pay for a café? How much would cost you to set up a café? How do you negotiate an offer that allows you to back out of the deal in case you don't like the cafe even after the trial period? How do you re-negotiate the lease to add tens of thousand of dollars to your cafe even before you take over? How do you make money when you buy a cafe not when you sell?
Session 2 “Your Business Plan” – How to double your Sales and Profit in 12 months?”
What skills and knowledge required dealing with vendors, brokers and landlords?
You will be guided with the following to complete your business plan:
- What are your goals you’d like to achieve?
- Who are your customers?
- What are you selling?
- What are your products and/or services?
- What are your marketing strategies?
- How much would you like to make in your first 12 months? In order to achieve this, how many coffees and food do you need to sell per day? how many staff do you need to employ? How much is your wage bill? What is your GST and tax bill?
You will learn some simple, effective and creative marketing strategies to boost your sales without spending hundreds or thousands of dollars on ineffective advertising.
How to build customer loyalty so that they will come back and buy from you again and again? How do you set up a referral system so that your customers will bring other people in?
Session 3 - Coffee Making Skills
Over a 4-hour period, you will:
P Learn some history of coffee
P How coffee is blended and roasted
P Learn how a good coffee should look, smell and taste;
P Experience some great and bad coffee examples
P Learn to achieve a perfect extraction. Under extract is too weak/watery/sour, over extract means burnt/bitter coffee
P How to texture silky creamy milk?
P What are the different types of coffee served in a cafe?
P How to make these coffees?
P How the machine works and how to do basic maintenance tasks such as grind setting, dose setting and grind
Session 4 “Business Law and Food Knowledge”
As a manager/owner of the business, you will deal with tax and finance law, employment law, insurance law, occupational health and safety and environmental law. Are you equipped with food safety knowledge?
Session 5 “Hiring the right people & Good Book Keeping Records”
The old saying goes that ‘staff will make or break your business’ This is especially true in hospitality. Having the right staff is vital to your business so you need to know, how to write the job ad to attract the right staff you require, how to shortlist applicants, what to look for during an interview, and also how to train your staff correctly.
How does GST effect your business? What accounting software you should use to keep track of your sales, your expenses, and your profit and loss?
What's an easy and quick way to order your stock and plan ahead? How to set up some simple checklists for your staff so you don't have to supervise them?
